I can supply more used 68030 various frequency, but all PGA. All removed from vintage systems.
As I know, the QFP-versions are available mostly in China or via Chinese resellers in EU. They could be modern China-fakes.

mostly the TC circuit like AD595 or AD597 do it. Check the circuits for thermocouples connection and read the datasheets.

That's easy. Use a standard AD converter you like. Maybe 7107 or 7135 or a MCU with ADC. At input you need to make a Precision full-wave AC/DC converter (two OpAmps). At input to precision full-wave AC/DC converter you need a resistor divider.
